One Step no Churn Coffee Ice Cream

While we don’t think a chef’s job is to cheat, it’s almost embarrassing at how easy this is. But, as you will find out, simple though it is to make, its flavor is deep, complex and utterly compelling. Best part…you don’t need any fancy equipment, although when grateful guests gobble it up and shower accolades your way, it does make you look like a culinary superstar. So, here's how it goes: you don't need an ice-cream maker. You could (and we often do) serve it with a chocolate sauce or scrap some fine dark chocolate over it. The quantities given here are the ones we often use, but feel free to play around with your own also.

Ingredients:
  • 300 ml double cream
  • 175 grams condensed milk
  • 2 tablespoons instant espresso powder
  • 2 tablespoons espresso liqueur  OR  2 tablespoons finest whiskey
  • 2 pieces of finest dark chocolate (pick your own brand)
Method

Whisk all the ingredients together until soft peaks form, and you have a gorgeous, caffe-latte-colored airy mixture, and then fill 2 x 500ml airtight containers, and freeze for 6 hours or overnight. Serve straight from the freezer.

Mommy’s Tip: When you add alcohol to ice cream and whisk well enough, it adds to the overall consistency & prevents icicles from forming when chilled overnight.
