Banana Cinnamon Pancakes
Pancakes
have been a part of the weekend breakfast staple for years at our house. Plain,
blueberry, strawberry, or any other version, they sure seem to provide you with
that satisfying fullness that can come only after eating a much cherished meal.
Now while we do not have anything against the ready-made mixes available in
supermarkets, on weekends, we’d rather make our own. Especially when it’s so
simple & can be whipped up in a jiffy. So stack up & slather on…
Ingredients:
- 1 cup flour
- 1 egg
- 1/2 tsp baking powder
- 1/2 cup milk
- 1 banana mashed
- 1 tsp cinnamon
- 1tsp vanilla extract
- Regular cooking oil
Method:
Mix all ingredients in a bowl &
rest for 10 minutes. It should be pouring consistency. Grease a non stick pan
with a little oil & heat (keep it to medium heat). Ladle out pancakes onto
the pan & when bubbles form around the edge flip over & cook for around
3/4 minutes on each side. Remove from the pan stack on a plate & enjoy with
honey or golden syrup. We’ve used sugar free raspberry jam (brand: St.Dalfour)
Feel free to play around with toppings as you like & relish with a piping
cuppa tea or coffee…
