Golden Corn Pie

Now while we certainly advocate making everything from scratch as much as possible in order to provide your family with the most nutrition, something has to be said for using a few short-cuts now and then, especially for us working gals. Thus the culinary powers that be have invented puff pastry. I tell you the sheer mind boggling variety that can come out of this one pack is absolutely fantastic. Sweet or savory, your creations can take on a whole new level once you’ve found the perfect puff pastry. Here is one simple yet delish recipe you can try…

Ingredients:
  • One basic short crust pastry
  • 2 cups sweet corn
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2  eggs
  • 1/4 cup cream
  • Herbs of your choice
Method:

Take basic short crust pastry & roll it out in a round or rectangle pie dish--bake it @ 200 degree C till golden brown. For the filling take the flour, sugar, salt, 2 eggs, 1/4 cup cream & herbs & process all together. Pour it in the baked shell. Sprinkle grated cheese on top & bake again @ 200 degree C till done 

Mommy’s Tip
·      Instead of cheese you can sprinkle chilly flakes on top if you like it spicier.Instead of pastry shell you can bake it with brown bread or rye bread as base. "Modern" shop in Bandra – Bombay is a good place to get excellent shop bought puff pastry.
