Tomato Apple Relish
This is a recipe that
brings together some very unlikely ingredients – apples & tomatoes melded
together in a sweetly spicy tangy mix that can be a wonderful condiment for
meats, cheeses, toast toppings, or however creative you’d like to get.
Ingredients:-
- 1 kg ripe red tomatoes peeled & chopped
- 200gm onions chopped
- 100 gm raisins
- 250 gm cooking apples peeled & chopped
- 300 gm sugar
- 225 ml vinegar
- 2tsp salt
- 1/2 tsp all spice
- 1/2 tsp ground ginger
- 1/2 tsp pepper
- 1/2 tsp cayenne pepper (optional)
Place all ingredients in a heavy sauce pan &
heat gently until sugar dissolves completely. Bring to boil stirring. Then
simmer on low heat stirring regularly (so mixture does not burn) for at least 1
hour or until mixture is thick & pulpy. Pour into sterilized jars &
cover. This is best left to mature for 1 or 2 days before eating.
Mommy’s Tip: Use as a topping on
crackers, brucchettas with cheese with a chilled white wine.
