Tomato Apple Relish

This is a recipe that brings together some very unlikely ingredients – apples & tomatoes melded together in a sweetly spicy tangy mix that can be a wonderful condiment for meats, cheeses, toast toppings, or however creative you’d like to get.

Ingredients:-
  • 1 kg ripe red tomatoes peeled & chopped
  • 200gm onions chopped
  • 100 gm raisins
  • 250 gm cooking apples peeled & chopped
  • 300 gm sugar
  • 225 ml vinegar
  • 2tsp salt
  • 1/2 tsp all spice
  • 1/2 tsp ground ginger
  • 1/2 tsp pepper
  • 1/2 tsp cayenne pepper (optional)
Method:-

Place all ingredients in a heavy sauce pan & heat gently until sugar dissolves completely. Bring to boil stirring. Then simmer on low heat stirring regularly (so mixture does not burn) for at least 1 hour or until mixture is thick & pulpy. Pour into sterilized jars & cover. This is best left to mature for 1 or 2 days before eating.

Mommy’s Tip: Use as a topping on crackers, brucchettas with cheese with a chilled white wine.
