Potato Mushroom Stir Fry

This is one of those dishes that is as versatile in terms of pairing it with something else as it is easy to make. It can be a side dish, an accompaniment to drinks, can be kiddie food if you want to introduce your children to a slightly more “grown-up” taste as well. The version mentioned here is the healthy one, but if you want to go the whole nine yards..throw in a bit of grated cheese or fresh cream & it’s an instant mood-lifter to beat those mid-week blues.

Ingredients:-
  • ½  kg potatoes
  • ½ kg mushrooms
  • 1 tblspn garlic oil
  • Powdered oregano
  • Black or white pepper to taste
  • A sprig of fresh dil
  • A couple of loaves of good shop bought garlic bread
Method:-

Take equal quantities of potatoes &button mushrooms. Dice them together . Use 1 tbspn garlic oil. In a non stick pan stir fry potatoes first with salt to taste until partly cooked. Add little water if required. Then add mushrooms, oregano, 1 tsp black or white pepper & simmer till mushrooms are cooked. Now add a small quantity of fresh dill chopped up in small quantity & put off gas stove. Close lid & let the herbs take over. The dish can be eaten as it is, or with warm toasted garlic bread.
