Basic Mayonnaise

One of my oldest memories regarding mayonnaise is one where Mom used to make it on weekends & then it would be used in sandwiches for the next 2 weeks at school. Those were the days when inexplicably my snack-box would be emptied faster than most…now I know why !! Most dishes taste infinitely better with a spot of mayo. While good quality shop bought is fine, nothing beats plain ol’ fashioned ones made at home. Here is a simple tried & tasted recipe to make your first pot of mayonnaise.

Ingredients:-
  • 1 egg
  • 1 tablespoon lemon juice
  • 2 teaspoons Dijon mustard
  • sea salt and ground white pepper
  • 1 cup (250ml) vegetable oil
Method:-
Process or blend the egg, lemon juice, mustard, salt and pepper in a food processor or blender until well combined. With the motor running, pour the oil in very slowly in a thin stream and process until the mixture is thick and creamy. Cool for a hour or so & then enjoy as you please…

Mommy’s Tip: Add a bit of fresh garlic, dill or chilly in case you want to jazz up the mayo with some flavours
