Quick & Easy Mango Kulfi

Mangoes for us conjure up memories of long summer vacations when school was shut & we had absolutely nothing to do except get sun-burned playing all day long. Summer holidays meant no school, no homework & no extra tuition. For all you aam log (read: mango lovers) here’s a sure-shot way to get your fix of that deliciously golden, ripe, juiciness that only graces our lives once a year. I say this with a resolute roll of my eyes because (except for me) our entire family loves any & everything mango. Am sure so does yours… :)

Ingredients:
  •  2 & 1/2 cup milk
  • 1/4 cup milk powder
  • 1/2 cup condensed milk
  • 1/4 cup sugar
  • 1cup mango pulp
  • 1 or 2 slivers of saffron
   Method:

  
Combine all ingredients except mango pulp in a non stick pan & simmer for 10 minutes or till it thickens a little. Cool completely Add mango pulp & mix well. Pour in moulds & freeze. Don’t worry…its creamy & doesn't form icicles.


Mommy’s Tip: Instead of mango you can also play around with different flavors like strawberry, chocolate, almonds, pistachios. Also ground cardamoms & 1/2 cup nuts would do just as well.
