Brown Sev with Dry Fruits

Brown Sev is classic Parsi sweet dish & considered very auspicious. It’s made on all special  occassions like Navroz (both new years), birthdays, weddings, anniversaries, job promotion even job interviews at times...if your mother is of the opinion that all others should also find her offspring sweet & loveable. When distributed to friends & neighbors it never fails elicit sighs of contentment & the proverbial belly rubbing that follows, which denotes an extremely satisfied palate. So here goes...

Ingredients:
  • One pack of shop bought brown sev (preferably Elephant brand)
  • Sugar to taste
  • Vanilla essence
  • 2 tbsp ghee or clarified butter
  • Dry fruits (as per preference)
Method:

Take a deep sauce pan & place clarified butter or ghee in it along with full pack of sev. Sauté for some time till sev is completely covered with butter. Add water a little at a time to cook sev (should not turn to mush) When the sev is part cooked, add sugar & vanilla essence & mix till sugar is dissolved. Turn off hob & cover with a lid. Fry dry fruits such as raisins, cashwes, charoli, almonds in clarified butter and sprinkle over sev.

Mommy’s Tip: In olden times it was a practice to place 2 boiled eggs & 2 bananas on either side of the plate & then it would be a sure fire Parsi celebratory breakfast !!!
