The importance of being an
Eedu (egg)
Being
a half Parsi (my mother is one) has
influenced not only my culinary style but also my sense of aesthetics also…or
so I’d like to believe. Most Parsees are hardcore carnivores (I’m no exception)
& think being a vegetarian in any way is an affront to our faith. Eggs in
any form pretty much are a staple part of our diet. Thus also there are
innumerable recipes which have egg as their main star of the show (& will
be featured here in future posts). However we’d like to start with the humble
saalli per eedu (eggs on potato strips). We’ve used plain saalli here but you
can play around with tomato or chilly flavored ones also. Finally as all bawas
would say…Jamjoji (eat well &
hearty) !!! :) :)
Ingredients:
- Eggs - 2
- Potato Sali (Straws of potato chips) - A hand full or half a bag..depending on size
- Oil – 2 - 3 tsp
- Salt to taste
- Grated cheese (Optional)
Method:
- Heat oil in a frying pan on medium heat
- Spread the potato sali in the frying pan and break the eggs on it
- Add salt to taste
- Sprinkle the grated cheese over it (Optional) and cover the pan for 3 – 5 minutes
- Remove the fried eggs and serve for breakfast / lunch / dinner / starter snack with drinks
- The fried eggs can be eaten with bread or chapatti also
Mommy’s Tip: If
u want the yolk to be hard, double fry the eggs after turning them over.
Instead of saalli you can also use wafers, kheema (minced meat), tomatoes, bhindi (lady finger). Actually
you can try pretty much any permutation / combination with this & it’s a
meal by itself… RELISH !!!
