Cake in a Mug

I couldn't believe I had just baked a delicious cake in my simple microwave oven in 90 seconds flat & that too without going through the entire rigmarole. It was simply putting all ingredients in a bowl & mixing them with a spoon & lo & behold a cake is ready to eat in the time it takes you to say Aabracadabra  :) So here goes…

Ingredients :
  • 1 tbsp butter softened
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp sugar
  • 1/2 tsp cinnamon, strawberries or any other berries diced & cut.
Method :

Combine all ingredients in a bowl except berries & whisk until batter is smooth, but do not over-mix. Fold in the berries. Oil a mug & pour the batter in it taking care it’s not full as the batter will rise in the microwave.

Microwave on High for 75-90 seconds or until done. It’s advisable to stand in front of the oven all the time till cake is done. Once the 90 seconds are up…use the stick test (take a long thing toothpick, or knife & insert into the cake, if it comes out clean, the cake is cooked) to check if it’s cooked through.  While the cake is cooling you can make a simple vanilla glaze by combining 1 tbsp butter, 1/4 cup powdered sugar,1/4 tsp vanilla extract & 1 tbsp cream or milk. Spoon it over the cake & allow it to soak in.

Mommy’s Tip :
I'll let you in on a little secret here---since I did not have fresh berries, I used sugarless blue berry jam & the cake turned out fine. So methinks this recipe lends itself to various flavors. Feel free to use raspberry, orange or whatever other flavor you like & relish with a steaming cuppa…ENJOY !!!
